I loved this recipe as a road map to ratio and cooking time. I used chard instead of spinach, tomatoes, zucchini instead of mushrooms and shallot instead of onion. I also used a bratt and bacon. I also always use frozen hash browns as my crust. I think you have a lot of wiggle room when making quiche, you just have to make sure you use the freshest and organic eggs, can't go wrong
